  • 3 cloves garlic, minced
  • 2 tsp ancho chile powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • black pepper, to taste
  • 2 tbsp olive oil
  • 4 wahoo fillets
  • 1 cup frozen corn kernels, cooked
  • 1 cup cooked rice (brown or white)
  • 1 cup cooked black beans, unsalted and drained
  • 2 tbsp chipotle peppers, finely chopped (optional)
  • 2 ripe avocados, chopped
  • 1 medium red onion, thinly sliced
