- 11 oz silken tofu, sliced (1 pack)
- ½ tsp salt, adjust to taste
- ⅓ tsp sugar, adjust to taste
- ½ cup mushrooms - shimeji, enoki or any of your favorite mushrooms
- 1 egg (optional)
- 1 tsp toasted sesame oil
- scallion, freshly chopped (for garnish)
- 2 tsp vegetable oil
- 3 cloves garlic, minced
- ⅓ cup kimchi with juice, chopped
- ¼ cup onions, diced
- 2 tbsp gochugaru (Korean red pepper flakes)
- ½ cup anchovy stock
- Add the soup base ingredients except for stock into a pot over medium-high heat. Stir-fry until onions turn translucent.
- Add tofu and stock, then let the mixture come to a boil. Add salt and sugar, and adjust according to taste.
- Add mushrooms and egg if using, and let it boil for another 3 minutes. Serve with a drizzle of sesame oil and garnish with chopped scallion. Enjoy!
