Korean Spicy Tofu Soup Recipe

Tantalize your taste buds with this fantastic Korean Spicy Tofu Soup that tastes absolutely heavenly! It's the perfect comfort food on a chilly day!

Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 11 oz silken tofu, sliced (1 pack)
  • ½ tsp salt, adjust to taste
  • ⅓ tsp sugar, adjust to taste
  • ½ cup mushrooms - shimeji, enoki or any of your favorite mushrooms
  • 1 egg (optional)
  • 1 tsp toasted sesame oil
  • scallion, freshly chopped (for garnish)

Soup base

  • 2 tsp vegetable oil
  • 3 cloves garlic, minced
  • ⅓ cup kimchi with juice, chopped
  • ¼ cup onions, diced
  • 2 tbsp gochugaru (Korean red pepper flakes)
  • ½ cup anchovy stock

Instructions

  1. Add the soup base ingredients except for stock into a pot over medium-high heat. Stir-fry until onions turn translucent.
  2. Add tofu and stock, then let the mixture come to a boil. Add salt and sugar, and adjust according to taste.
  3. Add mushrooms and egg if using, and let it boil for another 3 minutes. Serve with a drizzle of sesame oil and garnish with chopped scallion. Enjoy!
